Energy Bites for My Energetic 4 Year Old
Over the weekend my son was introduced to his first "Energy Bite" thanks to my super health nut sister. I thought for sure he would roll his eyes at them (like my 6 year old did) but he was more than willing to try them out. And he loved them! So we decided we needed to try out our own Energy Bites. I did some reading of various recipes on Pinterest but we decided to wing it and make our own recipe. The best part about this recipe is that its fool proof and no baking required. If my son could measure on his own, he wouldn't need my help at all. It was super kid friendly.
Energy Bites Recipe
1 C Oats
1/2 C Plain shredded coconut (I didn't even toast it)
1/3 C Honey
1/3 C Super Seed & Ancient Grains (#notsponsoredjustloved)
1/2 C Chocolate chips
1/2 C Roasted and lightly salted sunflower seeds
1/2 C Peanut Butter or Almond Butter or Sunflower Butter (we made two recipes one with peanut butter and one with almond butter and both were great!)
Mix ingredients together, then let it chill in the fridge for 30mins. Take them out and roll them into balls. Refrigerate again for a bit but they are pretty much ready. Keep them refrigerated to keep them fresh.
