Feelin' like Fall Food

Well, Labor Day has passed, it is still in the 90s in So. Cal but I am craving some fall food! So tonight I am making a Butternut Squash, Cranberry Quinoa Salad. I am going to cook it all but then serve it cold so it's not so heavy in this heat. I found this recipe on Pinterest but I am putting my own spin on it by adding goat cheese crumbles and grilled chicken. 

Butternut Squash Cranberry Quinoa Salad Recipe- Serves 4

Ingredients∙

2 cups butternut squash- cubed and baked

1/3 cup cranberries, dried

1 garlic clove (cook with quinoa)

1/3 cup Red onion (bake with butternut squash)

1 cup quinoa (cook as directed on packaging) 

3 tbsp Pumpkin seeds, toasted

Salt and black pepper

Dressing:

1/4 cup Balsamic vinegar

1 tsp Dijon mustard

 tsp Honey

Salt and black pepper

Optional Add-ins: Goat Cheese and Grilled Chicken

Roast butternut squash and red onion together, cook quinoa as directed on packaging but add garlic and salt and pepper to taste. Let both cool. Mix together all remaining ingredients with the butternut squash and quinoa. Mix dressing and add to salad. Chill until ready to eat.
